Just two taste buds

We’re Aylon and Thomas, the co-founders of Eclipse Foods. You might be wondering: How did a vegan entrepreneur in Berkeley and an award-winning chef from Chicago come together to create ice cream? Well, hang on, we’ll get there.

Aylon has spent his career consulting and advising CPG companies and start-ups about alternative protein, and is a committed vegan. Thomas worked for and staged at restaurants totaling 16 Michelin Stars and has been twice nominated for a James Beard Award.  Soon after, he dove into product development and food science, creating some of the best-selling plant-based products at JUST. As fate would have it, we kept bumping into each other at events and discovered we'd make a pretty great team.

Both of us share not only a passion for food, how it’s made, and where it comes from, but also how it affects the planet we call home.  Leveraging culinary know-how and food technology, we’re making plant-based ice cream that makes the most impactful choice, the most delicious one, too. All you have to do is eat up.

Better from the ground up

Eclipse is not another pint of frozen plant milk. We dug in and mimicked milk’s creamy molecular structure and functionality using plants like cassava, potato, rapeseed and corn.
